This dessert combines the subtle sharpness of Baobab, the warming heat of ginger,
rich sweet honey and comforting cream. A perfect dessert in many ways. Serve in
summer with raspberries or in winter with poached pears or quince. A wafer or biscotti
also goes well with them. Makes 6 desserts ideally use metal moulds (they’re easier

Peter’s Baobab, blueberry, basil, mint, spinach and yoghurt smoothie

This fresh tasting aromatic smoothie is bursting with goodness and flavour.
Just make sure you wash the herbs and spinach leaves in cold water, then
drain before using. I like to make it using sheeps yoghurt which adds a

Peter’s Baobab, banana, mango and apple smoothie

What a great start to the day or a post-gym pick-me-up. Full of goodness
and a real pleasure to drink. If, like me, you have a juicer to hand then
make your own apple juice using 2-3 unpeeled apples cut into quarters,
