World renowned chef Peter Gordon at Masterchef Live!

To celebrate the introduction of Baobab, the exotic fruit from Southern Africa, at Masterchef Live! at the BBC Good Food Show, Peter Gordon, award-winning chef and ‘godfather’ of fusion cuisine has created a range of exclusive Baobab recipes.  Free recipe cards will be handed out on Stand D44.

Now available in the UK, Baobab has extremely high nutritional qualities that outweigh other foods on almost every level, including twice as much calcium as milk and more magnesium than spinach.  It is a delicious and versatile ingredient that can be used in a wide variety of savoury and sweet recipes.  It is an easy and adaptable fruit to cook with and instantly boosts the nutritional value of any dish.  In addition to its extraordinarily high levels of key nutrients, it acts as a flavour enhancement, so another benefit for the health conscious is that less sugar can be used in cooking.

He treats the world’s culinary resources as one huge, exciting larder, and Baobab is his latest discovery. Its off white, powdery fruit pulp looks like sherbet and can be blended with anything.  Baobab is better suited as an ingredient rather than eaten on its own.  The fruit powder has a unique tangy taste described as ‘caramel pear with subtle tones of grapefruit’.
